Enjoy Your Garden During National Picnic Week

National Picnic Week takes place from this weekend (16 – 25 June) across the UK, so what better excuse to grab those blankets and baskets out of the cupboard and make the most of your outside space with a good old fashioned picnic!

No one wants to be trapped in the kitchen when the sun is shining, so the chefs at Primula Cheese have fashioned some quick and tasty ideas that will let you spend more time entertaining family and friends in your new home during the celebratory week.

Be warned though, these recipes are so tasty that your neighbours are sure to be jealous!

Grazing Peppers

This summer snack is perfect for a picnic party – a fresh idea, ready in a couple of minutes. The recipe is easy to scale up when friends and family pop in too.

Ingredients

  • 12 mini Peppers
  • 150g of Primula Cheese, any flavour
  • To garnish:
    • Chives – left whole
    • Pitted olives, sliced into rings
    • Pickled gherkins, sliced

 Directions

  • Slice the mini peppers in half vertically and remove any seeds
  • Squeeze the Primula Cheese into the hollow
  • Sprinkle with chives, olives or pickled gherkins

Cheesy Flatbread
This recipe is great for sharing with the family as part of an al fresco lunch on the lawn.
Ingredients

  • 380g ready rolled flatbread dough
  • 150g Primula Cheese with Chives
  • 125g cherry tomatoes, quartered
  • 40g rocket, watercress and spinach salad
  • Jalapeños, diced (if you like it hot)

Directions

  • Cut approx. 10cm circles from the dough
  • Place on a lined baking tray
  • Cook per packet instruction (flipping the flatbreads halfway through baking helps to get an even bake)
  • Remove from the oven and allow to cool
  • Top with Primula Cheese with Chive
  • Add a sprinkling of tomato and salad leaves

Swish Crackers

Impress when family and friends delve into the picnic basket with these swish crackers.

Ingredients

  • 150g tube of Primula Cheese – any flavour
  • 20g bresaola (this also works well with parma or salted ham)
  • 8g sea salt flatbread or any other fancy cracker
  • Basil, finely chopped
  • Chilli flakes

Directions

  • Spread a generous squeeze of Primula cheese onto each cracker
  • Top with bresaola, a sprinkle of chilli flakes and finely chopped basil
